Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, heat a tablespoon of olive oil and brown the chicken for 3-4 minutes.
  3. Sauté the potatoes in the same skillet for approximately 5-7 minutes.
  4. Melt 3 tablespoons of butter and whisk in 3 tablespoons of flour to form a roux, then gradually add 2 cups of milk until thickened.
  5. Stir in garlic powder, onion powder, salt, pepper, mozzarella, and Parmesan cheese until melted and smooth.
  6. Combine the chicken and potatoes in the baking dish, pour the cheese sauce over the top, and top with remaining mozzarella.
  7. Bake for 20-25 minutes until golden brown and bubbly. Let sit for 5 minutes before serving.
  8. Garnish with freshly chopped parsley before serving.
