Cheesy Chicken and Broccoli Casserole is a must-try!

A creamy, cheesy comfort food classic that's the perfect side or main dish. Loaded with tender broccoli and melty cheese, this casserole is quick to assemble and always a crowd favorite.

Ingredients
  

  • 4 cups fresh broccoli florets or frozen, thawed
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup mayonnaise
  • 2 large eggs beaten
  • 1 ½ cups shredded cheddar cheese divided
  • ½ cup chopped onion
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup crushed Ritz crackers or breadcrumbs optional topping
  • 2 tbsp melted butter for topping

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  2. Steam or blanch broccoli for 2-3 minutes until just tender, then drain and pat dry.
  3. In a large bowl, combine the cream of mushroom soup, mayonnaise, beaten eggs, 1 cup cheddar cheese, onion, garlic powder, salt, and pepper.
  4. Fold in the broccoli until well coated.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Sprinkle the remaining ½ cup of cheddar cheese on top.
  7. If using, mix the crushed crackers or breadcrumbs with melted butter and sprinkle over the cheese layer.
  8. Bake uncovered for 35-40 minutes, until bubbly and golden on top.
  9. Let rest for 5 minutes before serving.

Notes

  • ou can use cream of chicken soup instead of mushroom for a milder flavor.
  • Add cooked rice or chicken to make it a full meal.
  • Great make-ahead dish for potlucks and holiday dinners.
