Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8×4-inch loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together 2 large eggs, ½ cup of whole milk, ¼ cup of olive oil, and 2 tablespoons of Greek yogurt until smooth.
  3. In another bowl, combine 1 ½ cups of all-purpose flour, 1 ½ teaspoons of baking powder, ½ teaspoon of salt, and ¼ teaspoon of garlic powder. Stir until evenly mixed.
  4. Gradually fold the dry mixture into the wet ingredients until no dry flour remains. Do not overmix.
  5. Carefully fold in ¾ cup of shredded mozzarella cheese, ⅓ cup of chopped sun-dried tomatoes, and ¼ cup of chopped fresh basil.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Place your loaf pan in the preheated oven and bake for 40 to 45 minutes until golden brown.
  8. Remove the pan from the oven and let it cool for about 10 minutes before slicing.
