Preparation
- Preheat your oven to 350°F (175°C). Grease an 8×4-inch loaf pan with parchment paper.
- In a large mixing bowl, whisk together 2 large eggs, ½ cup of whole milk, ¼ cup of olive oil, and 2 tablespoons of Greek yogurt until smooth.
- In another bowl, combine 1 ½ cups of all-purpose flour, 1 ½ teaspoons of baking powder, ½ teaspoon of salt, and ¼ teaspoon of garlic powder. Stir until evenly mixed.
- Gradually fold the dry mixture into the wet ingredients until no dry flour remains. Do not overmix.
- Carefully fold in ¾ cup of shredded mozzarella cheese, ⅓ cup of chopped sun-dried tomatoes, and ¼ cup of chopped fresh basil.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Place your loaf pan in the preheated oven and bake for 40 to 45 minutes until golden brown.
- Remove the pan from the oven and let it cool for about 10 minutes before slicing.
