Servings: 12 rolls
Course: Breakfast, Brunch
Cuisine: American

Ingredients

  • 2 cans 8 ounces each refrigerated crescent roll dough sheets
  • 1/3 cup whipped chive and onion cream cheese
  • 4 large eggs
  • 2 tablespoons red bell pepper finely diced
  • 1 tablespoon milk
  • 1/4 teaspoon black pepper
  • 8 ounces ground breakfast sausage cooked and crumbled
  • 4 slices bacon cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese

Method

  1. Preheat Oven: Set your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. Prepare Scrambled Eggs: In a mixing bowl, whisk together the eggs, diced red bell pepper, milk, and black pepper. Cook this mixture in a skillet over medium heat until softly scrambled. Set aside to cool slightly.
  3. Assemble Dough: Unroll the crescent dough sheets onto a clean surface, pinching the seams together to form one large rectangle. Spread the whipped cream cheese evenly over the dough.
  4. Layer Fillings: Evenly distribute the scrambled eggs, cooked sausage, bacon, and shredded cheddar cheese over the cream cheese layer.
  5. Roll and Slice: Starting from a long edge, tightly roll the dough into a log. Slice the log into 12 equal pieces and arrange them in the prepared baking dish.
  6. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the rolls are golden brown and cooked through.
  7. Serve: Remove from the oven and let cool slightly before serving. Enjoy warm.

Notes

  • For extra crispiness, brush the rolls with melted butter before baking.
  • Store leftovers in an airtight container for up to 4 days and reheat in the oven or microwave.
  • For a vegetarian version, omit the meat and add sautéed mushrooms, spinach, or bell peppers.
  • These rolls freeze well—just wrap individually and freeze for up to 3 months.
