Preheat your oven to 375°F.
In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
Stir in the salt, pepper, and paprika.
In a large bowl, combine the cooked beef mixture with the cream of mushroom soup and milk. Mix until well combined.
Stir in half of the cheddar cheese, pickles, mustard, and ketchup if using.
Spread the beef mixture evenly in a greased 9x13 inch baking dish.
Layer the frozen tater tots on top in a single layer.
Sprinkle the remaining cheddar cheese over the tater tots.
Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
Allow to cool for a few minutes before serving.
