Ingredients
  

  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 can 10 oz diced tomatoes, undrained
  • 1 cup frozen peas or mixed vegetables optional
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced onion and sauté for 2-3 minutes until softened.
  4. Stir in minced garlic and cook for another minute until fragrant.
  5. Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  6. Season beef mixture with paprika, oregano, salt, and black pepper.
  7. Stir in uncooked rice, beef broth, diced tomatoes (with juices), and peas or vegetables if using.
  8. Transfer the mixture to a greased 9x13-inch baking dish, spreading it evenly.
  9. Cover tightly with foil and bake for 30 minutes.
  10. Remove foil, sprinkle shredded cheddar cheese evenly over the top.
  11. Return casserole to oven and bake uncovered for an additional 10-12 minutes until cheese is melted and bubbly.
  12. Garnish with chopped parsley and serve hot.
