- Cook the bacon in a skillet over medium heat for about 6–8 minutes, until crispy. Transfer to a paper towel-lined plate to drain.
- In the same skillet, melt a tablespoon of butter. Toast two slices of sourdough bread, cooking for about 3–4 minutes on one side until golden.
- Flip the bread and add a slice of cheddar cheese on each piece; allow the cheese to soften while the other side toasts.
- Layer turkey breast on one slice of bread, top with crispy bacon, and optional toppings. Place second slice on top, cheese side down.
- Add another tablespoon of butter to the skillet, grill the sandwich for 4–5 minutes on each side until golden brown and cheese is melted.
- Remove from heat, let it rest for a minute, cut in half, and serve immediately.
