Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup Catalina dressing
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon olive oil
  • ½ cup cherry tomatoes halved (optional)
  • 2 green onions chopped (for garnish)

Method

  1. Preheat the Oven – Set your oven to 375°F (190°C).
  2. Prepare the Marinade – In a bowl, mix Catalina dressing, honey, soy sauce, garlic, paprika, black pepper, salt, and red pepper flakes.
  3. Marinate the Chicken – Place chicken breasts in a baking dish and pour the marinade over them. Let it marinate for at least 15 minutes (or up to 2 hours for deeper flavor).
  4. Bake the Chicken – Drizzle olive oil over the chicken and add cherry tomatoes to the dish if using. Bake uncovered for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  5. Baste & Broil – Spoon some of the sauce over the chicken and broil for an additional 2-3 minutes for a caramelized finish.
  6. Garnish & Serve – Sprinkle with chopped green onions and serve hot with your favorite sides.

Notes

  • For extra flavor, let the chicken marinate overnight.
  • Make it spicier by adding extra red pepper flakes or a dash of hot sauce.
  • Use skinless chicken thighs for a juicier texture.
  • Leftovers can be stored in the fridge for up to 3 days and reheated easily.
