Step-by-Step Instructions
  1. Soak the chow mein egg noodles in boiling water for 30 seconds to 1 minute until softened, then drain and set aside.
  2. In a mixing bowl, combine dark soy sauce, regular soy sauce, oyster sauce, fish sauce, granulated sugar, and water. Whisk until dissolved.
  3. Heat 1 tablespoon of corn oil in a wok, sauté yellow onion and green onions for 1 minute, then remove from the wok.
  4. In the same wok, add another tablespoon of corn oil, spread the soaked noodles, and cook for 2 minutes undisturbed until crispy.
  5. Flip the noodles and crisp the other side for another 2 minutes.
  6. Add sautéed onions, green onions, bean sprouts to the wok, and pour in the sauce, tossing everything together for 1 to 2 minutes.
  7. Drizzle with sesame oil, toss gently, and serve hot.
