Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 lb baby potatoes halved
  • 2 ears corn cut into thirds
  • 12 oz smoked sausage sliced
  • 3 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • Lemon wedges and parsley for serving

Method
 

  1. Preheat oven to 400°F.
  2. Boil potatoes in salted water for 10 minutes. Drain.
  3. On a large sheet pan, toss potatoes, corn, sausage, and shrimp with olive oil and Cajun seasoning.
  4. Spread in a single layer and roast for 15–20 minutes, flipping halfway.
  5. Serve with fresh lemon wedges and chopped parsley.

Notes

  • You can use Old Bay instead of Cajun seasoning for a milder flavor.
  • Add a drizzle of melted butter before serving for extra richness.
