Step-by-Step Instructions
  1. In a medium mixing bowl, whisk together the dry ingredients: flour, cornstarch, baking soda, baking powder, and salt. Set aside.
  2. In a large mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar with a hand mixer for 2-3 minutes until light and fluffy.
  3. Add in the egg and vanilla extract and mix until combined.
  4. Gradually add the dry mixture to the wet mixture, stirring gently with a spatula until just combined. Chill the dough for at least 1 hour.
  5. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  6. Mix together the filling ingredients: light brown sugar, softened butter, flour, and ground cinnamon until well blended.
  7. Scoop chilled dough into 1.5-inch balls and flatten each into discs. Place filling in the center and top with another dough disc, pinching edges to seal.
  8. Bake for 10-12 minutes or until edges are golden brown. Cool on baking sheets for 5 minutes.
  9. Whisk together the glaze ingredients until smooth and pourable. Drizzle over cooled cookies and let set for 30 minutes.
