Method
Prepare the Pancake Batter:
- Separate the egg white and yolk into two bowls.
- Use an electric whisk to beat the egg white until soft peaks form.
- In a separate bowl, whisk together the egg yolk, plain flour, baking powder, and caster sugar.
- Slowly whisk in the milk to create a smooth batter.
- Gently fold the whipped egg white into the batter for a light, fluffy texture.
Cook the Pancakes:
- Heat half the oil in a non-stick pan over medium heat.
- Spoon a quarter of the batter into the pan, forming a circular pancake.
- Cook for 2–3 minutes on each side until golden brown and set.
- Repeat with the remaining batter to make four pancakes. Keep the pancakes warm in a low oven.
Prepare the Smash Burgers:
- In the same pan, heat the remaining oil over high heat.
- Divide the beef mince into two equal balls.
- Place one ball in the pan and use a spatula to smash it into a thin patty.
- Cook for 2–3 minutes until the edges are crispy and browned. Flip the patty, place a slice of cheese on top, and cook for another 1–2 minutes until the cheese melts.
- Repeat with the second ball of mince.
Assemble the Smash Burger Pancakes:
- Place one pancake on a plate as the base layer.
- Add a cheesy beef patty, drizzle with burger sauce, and top with sliced gherkins.
- Place another pancake on top to create a layered smash burger pancake.
- Repeat for the second serving.
Serve and Enjoy:
- Serve immediately while warm.
- Pair with a side of crispy fries or a refreshing drink for a complete meal.
