Ingredients
  

  • 1 lb beef stew meat
  • 1 tablespoon oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 6 cups beef broth
  • 2 cups water
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 6 oz egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method

  2. Brown beef in oil over medium heat. Set aside.
  3. Sauté onion and garlic. Add beef, broth, water, and veggies.
  4. Bring to a boil, then simmer 45 minutes.
  5. Add egg noodles and cook 8–10 minutes.
  6. Season to taste. Garnish with parsley and serve warm.

  • Swap in rice noodles or ramen for variety.
  • Add spinach or kale for extra nutrients.
  • Freeze broth and beef without noodles to avoid mushiness.
