In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, stirring until just combined.
Gently fold in the shredded coconut, chocolate chips, and mini chocolate eggs or candy-coated chocolates.
Scoop tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden and the centers look set.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
