Ingredients
  

For the Cookie Bars:
  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 5 cups all-purpose flour
For the Frosting:
  • 5 cups powdered sugar
  • 1 cup unsalted butter softened
  • ¼ to ½ teaspoon almond extract
  • 6 tablespoons milk
  • Green food coloring
  • St. Patrick’s Day-themed sprinkles

Method
 

  1. Preheat Oven & Prepare Pan: Preheat oven to 375°F (190°C) and grease a 12x17-inch baking sheet.
  2. Mix the Dough: Cream together butter and sugar until light and fluffy. Beat in eggs and vanilla extract. In a separate bowl, whisk together flour, salt, and baking soda, then mix into wet ingredients until combined.
  3. Bake the Cookie Base: Spread dough evenly in the prepared baking sheet. Bake for 15 minutes or until edges are lightly golden. Let cool completely.
  4. Make the Frosting: Beat butter until smooth, then add powdered sugar, milk, almond extract, and green food coloring. Mix until creamy.
  5. Frost & Decorate: Spread frosting evenly over the cooled cookie base. Sprinkle with St. Patrick’s Day-themed sprinkles.
  6. Slice & Serve: Cut into bars and enjoy!

Notes

  • Use gel food coloring for a richer green color without thinning the frosting.
  • Store in an airtight container at room temperature for up to 4 days.
