Prepare the Crust:
- Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a medium bowl, mix the flour and sugar. Add the cold butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
- Press the crust mixture firmly into the bottom of the prepared pan. Bake for 15–18 minutes or until lightly golden. Let it cool slightly.
Make the Filling:
- In a large bowl, whisk together the eggs, sugar, flour, and salt until smooth. Add the pink grapefruit juice and zest, mixing well.
Assemble and Bake:
- Pour the filling over the slightly cooled crust. Bake for 20–25 minutes or until the filling is set and no longer jiggles in the center.
Cool and Garnish:
- Allow the dessert bars to cool completely in the pan. For best results, refrigerate for at least 2 hours before slicing. Dust with powdered sugar and garnish with grapefruit slices or zest if desired.
