Prepare the Sausages:
- If using sausage links, cook them in a skillet over medium heat until browned and fully cooked, about 6-8 minutes.
- For patties, shape into small balls before cooking.
- Transfer the cooked sausages to a paper towel-lined plate to cool slightly.
Make the Pancake Batter:
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together egg, buttermilk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Small lumps are okay.
Coat the Sausages:
- Dip each cooked sausage into the pancake batter, coating it evenly.
- Use a fork or toothpick to lift the sausage, letting any excess batter drip off.
Cook the Bites:
- Heat a non-stick skillet or griddle over medium heat and grease it lightly with butter or oil.
- Place the batter-coated sausages onto the skillet and cook for 2-3 minutes per side, or until golden brown.
- Remove the bites and place them on a plate lined with paper towels.
Serve Warm:
- Serve the pancake sausage bites warm with maple syrup for dipping or drizzling.
- Optionally, dust with powdered sugar for added sweetness.
