Ingredients

For the chicken wings:
  • 2 pounds chicken wings flats and drumettes separated
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon baking powder
For the lemon pepper sauce:
  • 1/4 cup unsalted butter melted
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon cracked black pepper
  • 1/2 teaspoon garlic powder
  • Salt to taste
Optional garnishes:
  • Fresh parsley chopped
  • Lemon wedges

Method

Preheat and Prep the Wings:
  1. Preheat your oven to 425°F (220°C). Pat the chicken wings dry with paper towels to ensure crispiness.
Season the Wings:
  1. In a large bowl, toss the wings with olive oil, salt, black pepper, garlic powder, and baking powder until evenly coated.
Bake the Wings:
  1. Arrange the wings in a single layer on a parchment-lined baking sheet or a wire rack placed over a baking sheet. Bake for 20 minutes, flip the wings, and bake for another 20–25 minutes, or until golden brown and crispy.
Prepare the Lemon Pepper Sauce:
  1. While the wings bake, melt butter in a small saucepan over low heat. Stir in lemon juice, lemon zest, cracked black pepper, garlic powder, and a pinch of salt. Remove from heat.
Coat the Wings:
  1. Transfer the baked wings to a large mixing bowl. Pour the lemon pepper sauce over the wings and toss until evenly coated.
Serve and Garnish:
  1. Arrange the wings on a platter, garnish with chopped parsley and lemon wedges, and serve immediately.

Notes

  • Crispier Wings Tip: Ensure the wings are completely dry before seasoning.
  • Air Fryer Option: Cook the wings in an air fryer at 400°F for 20–25 minutes, shaking the basket halfway through.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to maintain crispiness.
  • Cheese Pairing: Sprinkle a little Parmesan cheese over the wings before serving for a tangy twist.
