Ingredients
  

  • 4 chicken thighs or breasts skin-on and bone-in
  • 1.5 pounds baby potatoes halved
  • 6 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 4 tablespoons butter melted
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Preheat the Oven
  2. Preheat your oven to 400°F (200°C).
  3. Prepare the Ingredients
  4. Wash and halve the baby potatoes. Mince the garlic and chop the parsley.
  5. Season the Chicken and Potatoes
  6. In a large bowl, combine the chicken thighs and potatoes.
  7. Drizzle with olive oil and melted butter. Add minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper. Toss everything until evenly coated.
  8. Arrange on a Baking Sheet
  9. Line a baking sheet with parchment paper or lightly grease it. Spread the chicken and potatoes in a single layer, ensuring the chicken is skin-side up.
  10. Bake the Dish
  11. Place the baking sheet in the preheated oven and bake for 35–40 minutes. The chicken should reach an internal temperature of 165°F (74°C), and the potatoes should be golden and crispy.
  12. Broil for Extra Crispiness
  13. If desired, broil the dish for 2–3 minutes at the end to make the skin and potatoes extra crispy.
  14. Garnish and Serve
  15. Remove the baking sheet from the oven. Sprinkle fresh parsley over the top and serve warm.
