Ingredients
  

  • Boneless chicken thighs or breasts
  • Andouille sausage
  • Shrimp peeled and deveined
  • Onion diced
  • Bell peppers diced
  • Celery chopped
  • Garlic minced
  • Diced tomatoes
  • Chicken broth
  • Long-grain rice
  • Cajun seasoning
  • Smoked paprika
  • Dried thyme
  • Bay leaves
  • Salt and pepper

Method
 

  1. Add chicken, sausage, onion, bell peppers, celery, and garlic to the crockpot.
  2. Stir in diced tomatoes, broth, and seasonings. Cook on low for 4-6 hours or high for 2-3 hours.
  3. Add rice and shrimp 30 minutes before serving.
  4. Serve hot with fresh parsley or hot sauce.

Notes

  • Freeze leftovers without rice for up to 3 months.
  • Adjust Cajun seasoning for desired spice level.
