Prep Your Ingredients
Dice the onion and bell peppers, and mince the garlic before starting. Measure out the seasonings and set everything within reach.
Cook the Vegetables
Heat olive oil in a large skillet over medium heat. Add the diced onion and bell peppers, cooking for about 5 minutes until softened. Stir in the garlic and cook for 30 seconds.
Brown the Chicken
Add the ground chicken to the skillet, breaking it apart with a wooden spoon as it cooks. Season with Cajun seasoning, smoked paprika, salt, and pepper. Cook until no longer pink.
Build the Sauce
Stir in the tomato paste and cook for 2 minutes to enhance the flavor. Add the brown sugar, Worcestershire sauce, chicken broth, and ketchup. Stir until combined. For extra spice, mix in hot sauce.
Simmer to Combine Flavors
Reduce the heat to low and let the mixture simmer for 10–15 minutes, stirring occasionally. This helps the sauce thicken and the flavors meld together.
Toast the Buns
While the chicken mixture simmers, lightly toast the buns. Toasting adds structure to the bun and prevents it from getting soggy.
Assemble and Serve
Spoon a generous amount of the Cajun chicken mixture onto the bottom half of each toasted bun. Add optional toppings like pickles, coleslaw, or shredded cheese. Place the top bun on and serve immediately.
