Method
- Preheat oven to 375°F.
- In a bowl, toss rhubarb with sugar, cornstarch, and lemon juice. Pour into a greased baking dish.
- In another bowl, mix oats, flour, brown sugar, and cinnamon. Cut in butter until crumbly.
- Sprinkle topping over rhubarb.
- Bake for 35–40 minutes or until bubbly and golden brown.
Notes
- Swap half the rhubarb with strawberries for a fruitier twist.
