Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add diced sweet potatoes, season with salt, pepper, and paprika. Cook for 10-12 minutes until tender.
  2. Add chopped red onion and corn to the skillet. Cook for 5-7 minutes until onions are translucent.
  3. Stir in cooked chicken and BBQ sauce. Mix well and cook for another 3-5 minutes until heated through.
  4. Sprinkle cheddar cheese on top. Cover the skillet and lower heat to medium-low. Allow cheese to melt for 3-5 minutes.
  5. Remove from heat and sprinkle green onions on top. Serve hot.
