For Toppings
  • 1 cup Shredded Mozzarella
  • 1 piece Red Onion (thinly sliced)
  • 1 piece Capsicum/Bell Pepper (thinly sliced)
  • 1 tablespoon Fresh Coriander (optional)

Method
 

Step-by-Step Instructions
  1. Marinate Chicken: Combine chicken breast with olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, sea salt, and black pepper. Allow marinating for at least 10 minutes.
  2. Cook Chicken: Heat frying pan over medium-high heat. Cook marinated chicken for about 6 minutes until golden brown and cooked through. Let it rest.
  3. Prepare Flatbreads: Preheat oven to 200°C (400°F) and line a baking tray with parchment paper. Arrange flatbreads on the tray.
  4. Assemble Flatbreads: Spread BBQ sauce on each flatbread, top with cooked chicken, mozzarella, red onion, and bell pepper.
  5. Bake: Bake for 8-10 minutes until cheese is melted and flatbreads are crispy.
  6. Serve: Allow to cool slightly, optionally garnish with fresh coriander. Cut and serve immediately.
