Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 2 green onions chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the flour, garlic powder, paprika, salt, and black pepper.
  3. Set up a breading station: place the beaten eggs in one bowl and the panko breadcrumbs in another.
  4. Dip each piece of chicken into the flour mixture, shaking off excess, then into the beaten eggs, and finally coat with panko breadcrumbs. Place the breaded chicken on the prepared baking sheet.
  5. Bake the chicken for 20-25 minutes, or until golden brown and cooked through, flipping halfway through for even cooking.
  6. While the chicken is baking, prepare the sauce by mixing together the mayonnaise, sweet chili sauce, and sriracha in a small bowl. Adjust the spiciness to your preference.
  7. Once the chicken is done, remove it from the oven and toss it in the sauce until well coated.
  8. Serve immediately, garnished with chopped green onions.
