Method
- Preheat oven to 350°F (175°C). Line a muffin tin.
- In a large bowl, mix bananas, butter, sugars, eggs, and vanilla.
- In another bowl, whisk flour, baking soda, and salt. Add to banana mixture and stir.
- Fold in nuts. Divide batter into muffin cups.
- Bake 18–22 minutes or until a toothpick comes out clean.
Notes
- Use very ripe bananas for best flavor
- Add chocolate chips for a sweet twist
- Freeze extras for an easy breakfast later
