Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine salt, five spice powder, fish sauce, rice wine vinegar, soy sauce, coconut sugar, optional brandy, and minced garlic. Whisk these ingredients together until fully incorporated.
  3. Take your chicken thighs and place them in a large Ziploc bag. Pour the marinade over the chicken, seal the bag tightly, and shake to coat. Marinate for at least 15 minutes.
  4. Heat a large, oven-safe pan over medium-high heat. Once hot, place the marinated chicken thighs skin-side down into the pan. Sear for about 5 minutes until golden brown.
  5. Transfer the pan to your preheated oven and bake for 30-35 minutes. Ensure the internal temperature reaches 165°F (75°C).
  6. Once baked, remove the chicken from the oven and let it rest for a few minutes before serving it over rice, garnished with cucumber slices.
