- In a medium bowl, combine salt, five spice powder, fish sauce, rice wine vinegar, soy sauce, coconut sugar, optional brandy, and minced garlic. Whisk these ingredients together until fully incorporated.
- Take your chicken thighs and place them in a large Ziploc bag. Pour the marinade over the chicken, seal the bag tightly, and shake to coat. Marinate for at least 15 minutes.
- Heat a large, oven-safe pan over medium-high heat. Once hot, place the marinated chicken thighs skin-side down into the pan. Sear for about 5 minutes until golden brown.
