Preheat your oven to 400°F.
Pat the cod fillets dry with paper towels and place them in a baking dish. Drizzle with olive oil and season with salt and pepper.
In a medium bowl, whisk together the coconut milk, lemon juice, lemon zest, garlic, ginger, and honey until well combined.
Pour the coconut sauce over the cod fillets in the baking dish.
Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
Remove from the oven and let it cool for a couple of minutes. Garnish with fresh parsley before serving.
