- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, combine ground chicken, ricotta cheese, egg, breadcrumbs, grated Parmesan, minced garlic, minced onion, fresh herbs, salt, black pepper, and Italian seasoning. Gently mix until just combined.
- Take a small portion of the mixture and roll it into 1.5-inch meatballs. Place them on the prepared baking sheet, spaced slightly apart.
- Transfer the baking sheet to the preheated oven and bake for 18-22 minutes until golden brown and the internal temperature reaches 165°F (74°C).
- Let the meatballs rest for a couple of minutes before serving with marinara sauce over pasta, in subs, or as an appetizer.
