This Baked Beef Chiles Rellenos Casserole layers seasoned beef, green chiles, and cheese into a spicy, satisfying weeknight dinner.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 4 oz cans diced green chiles
  • 2 cups shredded cheddar or Mexican blend cheese
  • 4 eggs
  • 1 cup milk
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. Cook beef and onion in a skillet until browned. Drain excess grease. Stir in spices.
  3. Layer half the green chiles in the dish, followed by beef and cheese. Repeat layers.
  4. In a bowl, whisk eggs, milk, flour, and baking powder. Pour over casserole.
  5. Bake for 35–40 minutes or until set and golden.

Notes

  • Top with sour cream or salsa before serving.
  • Use pepper jack cheese for added heat.
