Ingredients
  

  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 large egg
  • ¼ cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • 8 slices bacon
  • ½ cup ketchup
  • 2 tablespoons brown sugar

Method
 

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, salt, black pepper, thyme, and smoked paprika. Mix until just combined.
  3. On a clean surface, shape the meat mixture into a loaf about 10 inches long and 5 inches wide.
  4. Lay the bacon slices over the top of the meatloaf, tucking the ends underneath the loaf.
  5. Place the meatloaf in a baking dish or on a lined baking sheet.
  6. In a small bowl, mix together the ketchup and brown sugar. Spread the mixture evenly over the top of the bacon-wrapped meatloaf.
  7. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
  8. Let it rest for 10 minutes before slicing.
