  • 2 cups Delicata Squash Can substitute with Butternut squash.
  • 1 cup Cooked Brown Lentils
  • 1/2 cup Pecan Halves Can swap for walnuts or pumpkin seeds.
  • 1 large Apple Use your favorite variety.
  • 1/2 cup Raisins
For the Dressing
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Pure Maple Syrup
  • 1 tablespoon Dijon Mustard
  • 1/4 cup Olive Oil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper

Method
 

Step-by-Step Instructions
  1. Remove the tough stems from the curly kale. Tear the leaves into bite-sized pieces and place in a large bowl. Sprinkle with sea salt and gently massage for 2-3 minutes until softened.
  2. Preheat your oven to 400°F (200°C). Slice the delicata squash and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
  3. Combine balsamic vinegar, olive oil, maple syrup, Dijon mustard, salt, and pepper in a jar. Shake until emulsified.
  4. In the bowl with kale, pour half the dressing and toss. Add the roasted squash, lentils, chopped apple, pecans, and raisins. Drizzle the remaining dressing and mix well.
  5. Serve immediately for best freshness or store in an airtight container with dressing kept separate.
