Salad

  • 1 medium Carrot Peeled and julienned.
  • 1 cup Green Beans Cut into 1-inch pieces.
  • 1 large Tomato Or halved cherry tomatoes.
  • 1 medium Shallot Thinly sliced.
  • 1/4 cup Fresh Cilantro Avoid dried herbs.
  • 1/4 cup Thai Basil Freshly chopped.
  • 1/4 cup Coarsely Chopped Peanuts Can substitute with cashews or omit.

Method
 

Preparation
  1. In a medium bowl, combine lime juice, palm sugar, fish sauce, minced garlic, and crushed red chili flakes. Whisk until sugar dissolves.
  2. Shred green papaya and carrot into thin strands using a julienne tool. This will take about 5-7 minutes.
  3. Snap off ends of green beans and cut into 1-inch pieces. Dice the tomato and slice shallot. Gather herbs.
  4. In a large mixing bowl, combine shredded papaya, carrot, green beans, tomato, shallots, cilantro, and basil. Toss gently.
  5. Pour the dressing over the salad mix and toss thoroughly with tongs to ensure everything is well coated.
  6. Transfer the dressed salad to a platter and top with coarsely chopped peanuts and additional herbs for garnish.
