  • 1 tablespoon Sesame Oil or Olive Oil
  • 1 pound Ground Beef can substitute with ground pork, bison, or venison
  • 3 cloves Garlic minced
  • 1 tablespoon Fresh Ginger grated
  • 1 medium Red Bell Pepper chopped
  • 1 cup Shredded Carrots
  • 1/4 cup Green Onions sliced
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Ground Pepper
For the Sauce
  • 2 tablespoons Maple Syrup or brown sugar/coconut sugar
  • 1/4 cup Coconut Aminos or Tamari/Soy Sauce
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • 1 tablespoon Toasted Sesame Oil
  • 1/4 teaspoon Red Pepper Flakes optional
  • 1 tablespoon Arrowroot Powder or Cornstarch
For Serving
  • 1 head Boston Bibb Lettuce for wraps
  • 1 cup Steamed White Rice or Cauliflower Rice

Method
 

Step-by-Step Instructions
  1. In a measuring cup, whisk together the maple syrup, coconut aminos, rice vinegar, toasted sesame oil, and red pepper flakes until smooth. Set aside.
  2. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the ground beef, breaking it up with a wooden spoon. Sauté for about 5 minutes until browned.
  3. Stir in 3 minced garlic cloves and 1 tablespoon of grated ginger. Cook for 1-2 minutes until fragrant.
  4. Add 1 chopped red bell pepper and 1 cup of shredded carrots. Sauté for 3-4 minutes until slightly tender.
  5. Pour the prepared sauce over the beef and vegetables, stirring to combine. Simmer for 2-3 minutes until the sauce thickens.
  6. Stir in 1/4 cup of sliced green onions just before serving. Mix gently and remove from heat.
  7. Spoon the beef filling into crisp Boston Bibb lettuce leaves and serve with optional steamed rice.
