Step-by-Step Instructions
- Preheat the oven to 375°F (190°C).
- Slice off the tops of 6 orange bell peppers, remove seeds and carve jack-o'-lantern faces.
- Heat 2 tablespoons of olive oil in a skillet over medium heat, add 1 pound of ground beef or turkey, cook until browned (5-7 minutes).
- Stir in 1 chopped onion and 2 minced garlic cloves, cook until onion is translucent (3-4 minutes).
- Add 1 can of diced tomatoes, 1 cup of cooked rice, 1 teaspoon of dried oregano and season with salt and pepper. Simmer for 5 minutes.
- Stir in half of the shredded cheddar cheese until melted.
- Stuff each carved pepper with the filling, packing gently. Place in a baking dish.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil, sprinkle remaining cheese on top and bake uncovered for an additional 10-15 minutes.
