Ingredients
  

For the Peppers
  • 6 pieces Orange Bell Peppers Select firm ones for easy carving.
For the Filling
  • 2 tablespoons Olive Oil Can be swapped with vegetable oil.
  • 1 pound Ground Beef or Turkey Opt for lean turkey for a healthier alternative.
  • 1 medium Onion Chopped; yellow or white onion work best.
  • 2 cloves Garlic Minced; garlic powder can be used in a pinch.
  • 1 can Diced Tomatoes Use undrained for extra flavor.
  • 1 cup Cooked Rice Can substitute with quinoa or cauliflower rice.
  • 1 teaspoon Dried Oregano Can be substituted with Italian seasoning.
  • to taste Salt & Pepper Adjust according to taste.
  • 1 cup Shredded Cheddar Cheese Can swap with Monterey Jack or crumbled cotija.
For Optional Garnishing
  • to taste Fresh Parsley or Chives Adds a pop of color and freshness.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Slice off the tops of 6 orange bell peppers, remove seeds and carve jack-o'-lantern faces.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat, add 1 pound of ground beef or turkey, cook until browned (5-7 minutes).
  4. Stir in 1 chopped onion and 2 minced garlic cloves, cook until onion is translucent (3-4 minutes).
  5. Add 1 can of diced tomatoes, 1 cup of cooked rice, 1 teaspoon of dried oregano and season with salt and pepper. Simmer for 5 minutes.
  6. Stir in half of the shredded cheddar cheese until melted.
  7. Stuff each carved pepper with the filling, packing gently. Place in a baking dish.
  8. Cover with aluminum foil and bake for 30 minutes.
  9. Remove foil, sprinkle remaining cheese on top and bake uncovered for an additional 10-15 minutes.
