Ingredients
  

For the Chicken:
  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/2 tablespoon avocado oil
For the Sauce:
  • 1/4 cup coconut aminos
  • 1 tablespoon honey
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon ground ginger
  • 1 tablespoon garlic cloves minced
  • 2 tablespoons rice vinegar
  • 1/4 teaspoon black pepper
  • 1 teaspoon lime zest zest of one lime
  • 1 tablespoon lime juice juice of one lime
For Garnish:
  • 1 tablespoon sesame seeds
Optional for Serving:
  • 2 cups cooked green beans
  • 1 cup cooked white rice

Method
 

  1. Sear the Chicken: Heat avocado oil in a skillet over medium-high heat. Add the cubed chicken and cook for about 5-7 minutes, stirring occasionally, until golden brown and cooked through.
  2. Prepare the Sauce: In a small bowl, whisk together coconut aminos, honey, toasted sesame oil, ground ginger, garlic, rice vinegar, black pepper, lime zest, and lime juice until well combined.
  3. Combine and Simmer: Reduce the heat to medium-low and pour the sauce over the cooked chicken. Stir well to coat the chicken evenly. Let the sauce simmer for 2-3 minutes until slightly thickened.
  4. Garnish and Serve: Sprinkle sesame seeds over the chicken and serve with cooked white rice and green beans. Enjoy!

Notes

  • For a crispier texture, sear the chicken in batches to avoid overcrowding the pan.
  • Adjust the sweetness or tanginess by increasing or reducing the honey and lime juice.
  • To make this dish spicier, add red pepper flakes or sriracha to the sauce.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a skillet over low heat with a splash of water if needed.
