Ingredients
  

  • 1 lb chicken breast diced and seasoned with salt and pepper
  • 2 cups sweet potatoes diced
  • 2 cups cooked brown rice
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pan over medium heat.
  2. Add the diced and seasoned chicken breast to the pan. Cook for 5-7 minutes until golden brown and fully cooked, then remove from the pan and set aside.
  3. In the same pan, add the diced sweet potatoes. Cook for 8-10 minutes, stirring occasionally, until they are tender and slightly caramelized.
  4. Add the cooked brown rice and the cooked chicken back into the pan. Stir everything together and let it cook for an additional 2-3 minutes to blend the flavors.
  5. Taste and adjust seasoning as needed. Serve warm and enjoy!

Notes

  • To add more flavor, try using garlic powder, cumin, or a dash of cayenne pepper.
  • You can substitute chicken thighs for a juicier texture.
  • If the sweet potatoes are taking too long to soften, cover the pan for a few minutes to speed up the cooking process.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
