- 4 large russet potatoes
- 1 pound sirloin steak, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup chopped green onions
- 1/2 cup cooked and crumbled bacon
Instructions
- Preheat your oven to 400°F.
- Scrub the potatoes clean and poke several holes in each with a fork.
- Bake the potatoes directly on the oven rack for 45-60 minutes, or until tender when pierced with a fork.
- While the potatoes are baking, heat the olive oil in a skillet over medium-high heat.
- Season the steak pieces with garlic powder, onion powder, salt, and pepper.
- Add the steak to the skillet and cook for about 5-7 minutes, or until browned and cooked to your desired doneness. Remove from heat and set aside.
- Once the potatoes are done, carefully remove them from the oven and let them cool for a few minutes.
- Cut a slit down the center of each potato and gently squeeze the ends to open them up. Fluff the insides with a fork.
- Top each potato with cooked steak pieces, shredded cheddar cheese, sour cream, chopped green onions, and crumbled bacon.
- Serve immediately.
Notes
- For a healthier twist, consider using Greek yogurt instead of sour cream.
- You can also add steamed broccoli or sautéed mushrooms as additional toppings for extra flavor and nutrition.
