Ingredients

  • 4 large russet potatoes
  • 1 pound sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup chopped green onions
  • 1/2 cup cooked and crumbled bacon

Instructions

  1. Preheat your oven to 400°F.
  2. Scrub the potatoes clean and poke several holes in each with a fork.
  3. Bake the potatoes directly on the oven rack for 45-60 minutes, or until tender when pierced with a fork.
  4. While the potatoes are baking, heat the olive oil in a skillet over medium-high heat.
  5. Season the steak pieces with garlic powder, onion powder, salt, and pepper.
  6. Add the steak to the skillet and cook for about 5-7 minutes, or until browned and cooked to your desired doneness. Remove from heat and set aside.
  7. Once the potatoes are done, carefully remove them from the oven and let them cool for a few minutes.
  8. Cut a slit down the center of each potato and gently squeeze the ends to open them up. Fluff the insides with a fork.
  9. Top each potato with cooked steak pieces, shredded cheddar cheese, sour cream, chopped green onions, and crumbled bacon.
  10. Serve immediately.
